How to make Teriyaki sauce at home

How to make Teriyaki Sauce

Teriyaki sauce: a classic of the genre

  • olive oil (or corn) - 25 ml.
  • soy sauce - 145 ml.
  • wine vinegar with a concentration of 5-6% - 25 ml.
  • ground dried garlic - 5 g.
  • purified water - 65 ml.
  • crushed ginger - 10 gr.
  • linden or flower honey - 30 gr.
  • brown sugar - 75 gr.
  • potato starch - 8 g.
  1. Prepare a stewpan or ladle, pour soy sauce into the dishes. Pour granulated sugar, ground ginger and dried powdered garlic. Stir the contents, add olive or corn oil, honey, vinegar.
  2. Dissolve starch in water, mix to the main mass. Place the stewpan on the stove and turn on medium heat. When the teriyaki reaches a boil, turn down the power to the minimum mark.
  3. Stew the sauce in this mode for 6 minutes. You may think that the mass is too liquid. Do not worry, after cooling it will acquire the necessary density.
  4. At the end of the preparation, take the sample. If the sauce seemed salty than you planned, pour a little honey or granulated sugar. Let the teriyaki stand for a third of an hour, then move it into a sealed glass jar.
  5. Put in the cold for 7 hours to insist. If it is not possible to withstand the product for so long, use it immediately after cooking with fish, meat, shrimp.

Teriyaki sauce with wine

  • honey - 55 ml.
  • soy sauce - 140 ml.
  • dry / semi-dry white wine - 140 ml.
  • ground ginger - 15 gr.
  • garlic clove - 1 pc.

  1. Rinse the garlic clove from the husks, grind in a mortar and mix in soy sauce. Let the mixture stand for 10 minutes, then enter the wine (preferably rice).
  2. Pour the remaining ingredients, then put the contents in the saucepan on the stove. Cook at medium power for 2 minutes, then reduce heat to a minimum and simmer another 7 minutes.
  3. When the set time has come to an end, introduce honey and let it dissolve. Leave the teriyaki sauce to cool at room temperature, then transfer to cold for 3 hours.

Teriyaki sauce with orange

  • honey - 60 gr.
  • white sesame fried - 15 gr.
  • soy sauce - 140 ml.
  • fresh garlic - 2 prongs
  • green onion - 30 gr.
  • small orange - 2 pcs.
  • fresh ginger - 15 gr.
  • sesame oil - 30 ml.
  1. Take care of the preparation of the products. First, remove the garlic teeth from the husk, then pass the mixture through a press. Stir in the liquid honey, finely chopped green onion.
  2. Sesame can be taken white or black, see according to personal preference. Anneal the grains in a dry frying pan without oil for 3 minutes.
  3. Combine all ingredients, including orange juice, in one bowl and mix well. Let the contents stand for about 10 minutes, then immediately place on the stove. Tomite until the teriyaki is about to boil.

Teriyaki Chicken Breast

  • sweet rice wine - 220 ml.
  • sake - 210 ml.
  • soy sauce - 225 ml.
  • granulated sugar - 30 gr.
  • vegetable oil - to taste
  1. Rinse the meat and remove the peel if necessary. Pat the product with a paper towel. Pierce the breast in several places with a regular fork. In parallel, heat the vegetable oil in a pan with a thick bottom.
  2. Fry the meat until golden. After the manipulation, drain the oil. Combine rice wine, sugar, soy sauce and sake in a separate container. Pour the finished composition into the pan. Continue roasting the meat. Turn it over periodically.
  3. Once the sauce has thickened, turn down the burner to a minimum. Stew the chicken for a while, periodically turning the meat. After cooking, you can serve it with a vegetable side dish.

Teriyaki Noodles

  • chicken fillet - 420 gr.
  • leek - 60 gr.
  • teriyaki - 160 ml.
  • sesame seeds to taste
  • buckwheat noodles - 220 gr.
  • olive oil - 25 ml.
  • carrots - 125 gr.
  • broccoli - 120 gr.
  1. Peel the carrots and wash thoroughly to remove any remaining dirt. Chop the product with a thin straw. Simultaneously heat the olive oil in a pan. Fry the root crop until golden brown. Next, rinse the leek and chop into thin circles.
  2. Cut the prepared broccoli into small pieces. Add vegetables to the fried carrots. Pass the food in the pan for a while. Start preparing the meat, rinse and chop into pieces.
  3. Stir in the fried vegetables. Add spices to taste, enter teriyaki sauce. Stir the ingredients and simmer on a lazy fire for about 6 minutes.
  4. The noodles must be prepared following the instructions on the packaging. After that, lay out the product to the vegetables. Garnish the dish with sesame seeds, done.

Teriyaki Salmon

  • asparagus - 6 pcs.
  • salmon - 160 gr.
  • butter - 25 gr.
  • carrots - 55 gr.
  • salmon caviar - 30 gr.
  • mushrooms - 30 gr.
  • garlic - 2 prongs
  • filtered water - 80 ml.
  • sugar - 10 g.
  • sesame seeds - 5 gr.
  • grated ginger - 10 gr.
  • allspice - 3 gr.
  • soy sauce - 10 ml.

  1. Warm the butter in a small saucepan. After this, add slices of salmon to the product. Fry fish for about 7 minutes. Do not forget to flip. Boil slightly salted water in a separate container. Put asparagus in it.
  2. Cook the product for 5 to 7 minutes. Peel the carrots in parallel and cut them into rings. Wash and chop mushrooms in any form. Boil food until cooked. This will take about 7 minutes. After cooking salmon, pour the butter into a common pan.
  3. In the same container, mix cane sugar, soy sauce, ground ginger and pepper, chopped garlic and filtered water. Simmer food until thick. Put the prepared asparagus on the dish. Place the fish on top.
  4. Garnish with salmon caviar. Put the mushrooms and carrots, pour the finished products with freshly made sauce. Garnish the dish with sesame seeds. Serve to the table.
